Diet Coke contains no calories or sugar, so by the strict definition of a fast as calorie restriction it does not break one. The caveat is the artificial sweeteners. In some people they can cause a small insulin or cephalic-phase response and drive sweet cravings, and whether they blunt autophagy is unsettled. For weight loss it is usually fine; for a strict autophagy fast it is better avoided.
If your goal is fat loss and appetite control, an occasional Diet Coke will not derail you. If your goal is maximum autophagy, or you notice it triggers hunger and cravings, skip it. Water, sparkling water, or black coffee are cleaner choices.
An occasional can is unlikely to matter on a weight-loss fast; daily heavy use is better replaced with water or sparkling water.
